Preheat oven to 450. Toss carrots in honey, olive oil, sumac, pepper, and salt. Place on foil covered pan. Cook for 40 to 50 minutes- carrots should be well browned and tender.
While carrots cook, combine greek yoghurt, lime juice, and very generous pinch of salt. Combine thoroughly and drizzle mixture onto carrots after roasting.

Drizzle additional honey and sprinkle roasted pumpkins onto carrots before serving.
