Honey Sumac Carrots with Lime Yogurt Sauce
Citrusy sweet and perfectly roasted carrots with an electric lime yogurt sauce.
- 2 bunches whole carrots peeled
- 3 tbsp extra virgin olive oil
- 2 tbsp honey
- 1 tbsp sumac
- 1/2 tsp black pepper
- 1/2 cup greek yoghurt
- juice of 1/2 lime
- salt to taste
- 1/8 cup pumpkin seeds optional
Preheat oven to 450. Toss carrots in honey, olive oil, sumac, pepper, and salt. Place on foil covered pan. Cook for 40 to 50 minutes- carrots should be well browned and tender.
While carrots cook, combine greek yoghurt, lime juice, and very generous pinch of salt. Combine thoroughly and drizzle mixture onto carrots after roasting.
